Still photography beats video hands down. Yes, trying to capture just one or so still photos is challenging but the results merit the worth of the effort.
I have seen just two of these rare events – one in the Camargue, France and the other at Tarifa, Spain.

This gets 5* from me, for sure! I love the overall simplicity of the photo, its use of dramatic gold-like colouring of the foreground accentuated by the truly wonderful sombre clouds above. The radiating spokes of the rainbow are incredible. FANTASTIC!!! Well captured, Dennis. Great shot. You must be HIGHLY pleased to have photographed this remarkable vista!
